Ube halaya/halayang ube or you can also call it as Ube (purple yam) jam is commonly serve as a snack or dessert, but sometimes Filipino use it as a spread in breads like pandesal or monay. It’s not only for a snack to eat but you can also use it in your recipes as a flavoring like in cakes or ice creams. It is also famous as a favorite topping in halo-halo.

Cooking ube halaya looks like an easy recipe to cook as it only consist of several ingredients. Cooking also needs some patience and time, starting from boiling and peeling the ube, then mashing it and until you need to continuously mix it for 45 mins. until it’s cooked. Yes you’ve read it right, you need to mix it non-stop as it gets burn easily and you want it to have a creamy and soft texture not a lumpy one.

Ingredients
  

  • 1 kg Ube
  • 1 can/cup Condensed Milk
  • 1 can/cup Coconut Milk
  • 1 can/cup Evaporated Milk
  • 2 tbsp Butter
  • 1/4 cup Desiscated Coconut
  • 1/2 cup Grated Cheese
  • 1 tsp Vanilla extract

Instructions
 

  • Wash the ube first and cut all in half to easily cook the ube
  • Boil until it softened. Poke it with fork to check if it is already soft enough to mash it
  • Peel it. Boiling it first will be easier to peel it
  • Transfer in a large bowl and mash it usin fork
  • In a large pan, melt the butter and add the mashed ube.
  • Add in the brown sugar, evaporated milk, condensed milk, coconut milk and vanilla extract
  • Mix continuously for 45 mins or until you got the right thickness. For smoother texture, mash it further in a noodles strainer while pressing it down with your spatula
  • after you got the thickness you want, pour a little oil in your container to avoid the ube sticking on the container
  • Divide the halaya in 2 containers and chill it for an hour
  • For the coconut toppings, in a low heated pan, place the desiccated coconut and continuously stir it until it turns brown. Becareful as it burns easily
  • Get the chilled ube and transfer in a plate then place the coconut toppings and grated cheese for the other serving.
