No oven? That’s not an issue here in our ube cheese hopia recipe. In this recipe, we’ll teach you how to make it without over or baking by using a frying pan and that’s it. After you make this, it will be gone in a blink of an eye as no one will ever resists this delectable hopia.

FLAKY UBE CHEESE HOPIA (NO BAKE, NO LARD)

Who would not miss the one of our favorite pastry that we often bought in our local bakeries or store.
One brand that we will not forget is Tipas, they have the most delicious and also the most available hopia that you could by anywhere. Eng bee tin is one of the well known brand as well.

Ingredients
  

DOUGH #1

  • 2 cups Flour
  • 1/2 cup Water
  • 1 tsp Ube flavoring or foor coloring
  • 1/2 cup Vegetable Oil

DOUGH #2

  • 1 1/2 cup Flour
  • 1 cup butter (or 250g butter)
  • 1/2 cup Sugar

FILLING

  • Cheese
  • Ube Halaya

Instructions
 

DOUGH #1

  • Mix all the ingredients for dough #1
  • Pour and spread oil on hand to avoid dough from sticking
  • Knead the dough till becomes purple
  • Set aside

DOUGH #2

  • Mix all the ingredients for dough #2
  • Ensure butter were chilled, else the dough will not be crumbly or it will be wet
  • Set aside
  • Roll dough #1 untill flatten with 1/2 inch thickness. Yes, the purple one
  • Spread dough #2 on top of dough #1
  • Fold all four sides until second dough were no longer visible
  • Roll with rolling pin until flatten
  • Fold all sides again.
  • Repeat rolling and folding for about 4-5 times until dough #1 and #1 are combined
  • Flatten the dough with as thin as possible then roll it into cylinder
  • Wrap the dough with cling wrap and chill for 2 hours
  • For the filling, slice cheese into cubes
  • Scoop a spoonful of ube halaya and covering a cut of cheese
  • Shape into balls
  • Chill for 1 hour
  • 2 hours later, unwrap the refrigerated dough
  • Roll into a narrower cylinder-shaped and cut about an inch thick
  • Take a piece of dough, press it with your hand. Ensure to press it in the center of the cylinder for the flaky texture
  • Flatten it more with rolling pin
  • Grab the ube cheese filling and place it in the center
  • Gather the sides of the dough over the filling and pinch together to close
  • Per preference, use cookie cutter or molder to shape it. But you can still shape it manually as cube.
  • Repeat until all doughs are filled
  • Preheat the pan for 3 minutes over medium heat
  • Cover to cook the fillings inside
  • After 5 minutes, remove the cover and flip hopia until each sides turn golden brown
