Mango graham is a popular dessert in the Philippines. Some call it Mango float or crema de mangga. It is made by creating layers of graham, cream and mangoes. So I thought, why not recreate or reinvent it. Representing my very own Mango graham flan or mango graham flan cupcake recipe. This recipe is perfect dessert for summer due to its tropical and sweet taste then at the same time it’s a little bit cold. No bake Mango graham flan cupcake

MANGO GRAHAM FLAN RECIPE (No bake, No steam, No mixer)

Ingredients
  

CRUST

  • 12 pcs Graham crackers
  • 1/3 cup Melted Butter

MANGO FLAN

  • 3 tbsp Water
  • 2 tsp Gelatin
  • 1 cup All purpose or Heavy cream
  • 1 cup Condensed Milk
  • 6 pcs Egg Yolks
  • 1 tsp Vanilla Extract
  • 2 pcs Ripe Mango
  • 2 tsp Granulated Sugar

Instructions
 

  • Place in a zip lock the graham crackers and crush it with rolling pin or for more convenience, use a food processor
  • Mix the melted butter in the crushed graham until the butter is well distributed
  • Get a cupcake molder and place 1/2tbsp of crushed grahams or at least 1/3 inches of thickness for crust.
  • Press it with something flat and hard for the crust not to mix with the liquid mixture later
  • Dillute the gelatin in water and set aside until it blooms
  • In a large bowl, mix the cream, condensed milk, egg yolks and vanilla extract
  • Place it in a saucepan and mix the 3/4 of the gelatin mixture.
  • Boil until it thickens a little bit.
  • Strain it to be smooth
  • Put the mixture in the molder up tp the 3/4 of it and cool it for at least an hour
  • Slice the mangoes and scoop out the meat from the mango cheeks. Be careful not to cut through the skin. Don’t throw away the seed part, you can still scrape some meat from it later and use it as a toppings later.
  • Place the mango meat in a blender,juicer or food processor to make a puree.
  • Pour the puree in a sauce pan and mix the remaining gelatin mixture and 2 tsp of sugar
  • Mix it and just bring it to boil.
  • Get the chilled flan and ensure it’s became solid then pour mango puree just 1/8 of the molder.
  • Add mango toppings that have been scraped from the mango seed or the remaining mangoes
  • Chill in the fridge for at least an hour
  • Serve, Share and Enjoy!
