Pineapple fried rice is originated from Thailand that is called Khao phat sapparot.  This fried rice is probably one of the most famed dished that comes to mind in Thailand. Though I’m not aiming for the authentic version of it, so just treat this as just my take on Thai Pineapple fried rice.  Since it’s my precious recipe, I will claim it as the best Thai pineapple fried rice recipe ever that I’ve created. I highly suggest to use a whole pineapple so you’ll have a pineapple bowl when you post in your facebook or instagram post later. Hope you enjoy it!

PINEAPPLE FRIED RICE

Ingredients
  

SAUCE

  • 1 tbsp Oyster Sauce
  • 1 tbsp Soy Sauce
  • 1 tsp Fish Sauce
  • 1 pinch Ground Pepper
  • 1 tsp Sugar
  • 1 tsp Curry Powder

MARINATED SHRIMP

  • 1 tbsp Soy Sauce
  • 1/2 lbs Shrimp Meat
  • 1 pinch Ground Pepper

FRIED RICE

  • 4 cups Cooked Rice
  • 1 cup Pineappl Tidbits
  • 1/2 cup Raisins
  • 1/2 cup Toasted Cashew Nuts
  • 1 pinch Ground Pepper and Salt
  • 1 cup Frozen carrots and Green peas
  • 3 large Eggs

GARNISH

  • Pork Floss
  • Spring Onion

Instructions
 

  • Mix all the ingredients for the sauce and set aside
  • Marinate the shrimp in soy sauce and pepper
  • To create a pineapple bowl, cut the pineapple in half lengthwise
  • Cut all the way around the edge leaving about ¾” of the outside of the pineapple.
  • Cut and remove the core.
  • Slice into chunks by making a grid pattern of about 1" pieces. Be careful not to cut through the outer skin then scrape the chunks using a spoon.
    You can save the juice to drink later
  • Cut into smaller pieces the chunks as you don't want to be choked by the pineapple later
  • In a large heated pan, pour oil and make a scrambled eggs then set aside.
  • In the same pan, saute the garlic until toasted brown
  • Toss in the ham and shrimp and wait for the shrimp to turn orange
  • Add in the peas, carrots, sauce and rice. In low heat, mix until all the rice is covered with the sauce.
  • Now add the egg, raisins, cashew nuts and pineapple. Then put salt and pepper to taste
  • Stir well until all ingredients are incorporated.
  • Serve in the pineapple bowl and enjoy!
